A CREATIVE pastry chef from a Killarney hotel is enjoying the sweet taste of success having been deemed a winner in a nationwide search to find a new mouth-watering dessert with banana as its key ingredient.
Organised by banana importer Fyffes and fronted by TV chef Donal Skehan, the invitation to design a dessert to help people to get through the lockdown and to use their imagination and baking skills.
Muckross Park Hotel pastry chef Alline Isense Dalpiaz impressed the judges with her scrumptious banana brownie which won the ‘Best Styling’ category.
She used all vegan ingredients, combining delicious layers of brownie with dark chocolate ganache, fused with banana buttercream and finished off with chocolate cookie, praline and banana brûlée.
Brazilian-born Alline moved to Kerry on a permanent basis three years ago, having first arrived in the county as an English student in 2013. Her Italian husband, Matteo works with Tweak in Killorglin where they live.
Admitting to having had a passion for baking since a young teenager, Alline honed her skills whilst working in restaurants and hotels in her native Brasil.
Donal Skehan had issued a challenge to design a dessert that could become a meal-topping choice on tables around Ireland and abroad.
“The success that Alline has achieved reflects the dedication and devotion she puts into her baking and the obvious enjoyment she gets from it,” donal said.
